Bruce’s Who Hash

This recipe is a spoof on corned-beef hash. Everyone who has seen ‘How the Grinch Stole Christmas’ will recognize the name. It’s called Who Hash because Bruce uses different meats (almost always leftovers) to make it. Serves 2

Ingredients:

6-8 oz. leftover meat: duck, chicken, pork, steak, salmon, etc. cut or shredded into bite-size pieces
3-4 medium sized potatoes, scrubbed and diced
1 small onion, chopped
10-12 Italian chile peppers, drained and cut in half (this is optional of course)
1/2 bunch of arugula, coarsely chopped (also optional)
olive oil
eggs (however many you like to eat)
Toast if you want it

Method:

Saute’ the potatoes over medium heat in olive oil for approximately 5-8 minutes turning frequently to avoid burning. When the potatoes are slightly browned, add the onion and peppers (if using) and saute until the onion is soft and translucent and the peppers are slightly toasted.

Toss the meat in with the potatoes just before serving; reduce the heat to low. Taste for seasoning.

Bruce's Who Hash with chicken and prosciutto

Cook the eggs to your liking.

Plate up the eggs and the hash and sprinkle the arugula over the top of all. Serve with or without toast.

The finished dish

We have found that the peppery flavor of the arugula balances the richness of the meat and potatoes.
