Fresh Tomato Soup

This soup tastes of summer.  It is best the same day the tomatoes are roasted.  This recipe is from the roasted tomato sauce recipe.  Serve it with fresh bread (or garlic bread) and a salad for a complete meal.  Serves 4

Ingredients:

4 cups fresh tomato sauce (see recipe)
thinly sliced garlic
fresh basil, chiffoned
drizzle of olive oil
Salt & pepper to taste
cream (optional)

Method:

Heat the tomato sauce in saucepan on low heat.  Be careful not to let it thicken.

Add salt and pepper to taste.  Put some sliced garlic in the bottom of each of 4 bowls and ladle the soup over the top.

Add the basil and drizzle the olive oil.   Serve and enjoy the simplicity of this beautiful soup.

If you want to make cream of tomato soup, add 1/4 cup cream and heat through.   Serve as above.
