Roman Style Pizza on January 19
When I was in Rome last year, I had a pizza in a trattoria that was topped with truffles and mushrooms. The pizza was covered with the mushrooms and truffles (they were very finely chopped)and just had a little dollop of tomato sauce and romano cheese in the middle. It was awesome and I wanted to try to make it at home.
I made pizza with home-made dough, and home-made pizza sauce (from the tomato sauce I made over the summer from fresh, local farmer’s market tomatoes). I topped it with Oregon black truffles, dried porcini’s, and locally grown shitakes, and maitakes all finely chopped. I dolloped the middle with the tomato sauce and topped it with grated Parmesan cheese. It was excellent!!
Bruce made a salad with arugula, dandelion, radicchio, kumquats, Cara Cara oranges, and radish, served with a champagne vinaigrette.
We drank a 2005 Elemental Cellars Syrah.
