Meatball-Style Stuffed Meatloaf on Monday October 6
Bruce loves meatloaf and he loves meatballs, so I made the best of both using the ingredients from my family’s recipe. I stuffed the meatloaf with homemade mozzarella cheese, sliced prosciutto, and fresh basil.
I topped the loaf with homemade tomato sauce and let the oven do the rest. The meatloaf was served with more tomato sauce and some orzo that was tossed with the olive sauce we made on Sunday to go with the lamb.
We enjoyed a nice salad of arugula, gorgonzola dolce, amazing concord grapes, with a white balsamic vinaigrette. The wine was Treviso Malbec 2005.
We Still Had Fresh Truffles on February 7
I made meatloaf with paprika mushroom gravy (a Hungarian twist) and served it with truffled, paprika mashed potatoes. I can’t believe we still had truffles!!
Bruce made a salad of mixed baby greens, apple, kumquat, roasted walnut and shaved Parmesan cheese. The dressing was a balsamic vinaigrette. We drank red wine that from Italy that is almost my namesake: Eliseo from Toscana.
